ANKO Calzone Machine For MiniStop In The Philippines

In the Philippines, there's a convenience store called MiniStop from Japan. In the store, there's a food called Kariman; it looks and tastes similar to an Italian calzone. The only difference between Kariman and calzone is that Kariman is cheaper, thicker and has less stuffing. Kariman is easy and yummy, so soon it became very popular, particularly for nine-to-five employees.

At the trade show, Hans Gourmet brought the ingredients and applied them to ANKO's food machine. The food processing machinery is mainly built for making dumplings; hence it isn't suitable for making bread type of food. Therefore, ANKO customized one of the bakery equipment, calzone machine, based on Kariman's special requirements. There are a few things ANKO’s R&D team did to the calzone machine:

Since there are 300 MiniStops in the Philippines, it requires production solutions to deliver the desired amount of Kariman. The supplier of Kariman, is Hans Gourmet, who is one of the major food suppliers in Philippines; their clients include MiniStop, 7-11, hotels and shops. For years, Hans Gourmet had their food made by hand, but the growth in demand had forced Hans Gourmet to adapt.

  • the ANKO R&D team adjusted its components to advance the production capability;
  • they added a water spray function to increase the flour stickiness of Kariman;
  • modified the mold to adjust flour skin size.

After modification, calzone machine is capable of producing 4,000 Karimans per hour and with the increased production capability, it allows Hans Gourmet to expand their business quickly. Months later, Hans Gourmet contacted ANKO to discuss another procurement of Kariman calzone machine to cope with MiniStop's special promotion season.

Kariman calzone machine furthermore attracted a U.S. food company's attention on the machine. The U.S. company wished to purchase a bakery equipment to supply large amount of Karimans in California because they see a great potential in the food market. ANKO customized calzone machine to adapt to Americans' eating habits, which means putting more stuffing, thinner flour skin and bigger size for Americans.

Calzone machine is mainly for making puff pastries including bureks, bourekas, calzones, curry puffs, meatpies, patties, karimans, etc.

To lower the labor and ingredient costs, World Trading moved the Japan plant to Thailand, and even so the handmade process still couldn't meet the demand, so World Trading contacted ANKO for calzone machine solutions.   After finishing the mould design of calzone machine and ingredient preparation, the test began and the result was thrilling. ANKO was not only able to design a calzone machine that is capable of making calzones with acceptable production capability (3,000 big size calzones/ hour, 10,000 one bite calzones/hour), the calzone bread machine's small size with four wheels also allows users to move it easily. 

World Trading is a leading Japanese food company who's been importing and manufacturing Mexican food, including flour tortillas, Jalapenos, salsas and varieties of flat breads, and their growing calzone, pizza business required them to expand their current bakery production lines.

Calzone is made of ingredients similar to pizza and originally from Italy. Generally, they look like folded pizza and are more portable than normal pizza. It is one of the major foods that World Trading sells in Canada and the U.S. After settling in Thailand, they weren't able to meet the targeted production expectations with manual labor. Thus, World Trading started to look for calzone machine to increase calzone production capability. At the beginning, World Trading consulted ANKO for calzone dough bread machine, and ANKO presented their calzone machine with multiple functions including feeding, pizza base making, forming, baking, etc. While World Trading was visiting the ANKO's factory, there was a Taiwanese client testing dumpling machines, and it made World Trading wonder about the possibility of using dumpling machines to make calzones. In the end, instead of using calzone machine to fabricate 15cm calzones, the calzone machine, HLT-700XL, was modified for its purpose based on ANKO's 40 Years of experience. ANKO's brilliant calzone dough bread machine design ability achieved World Trading's requirements of a low labor cost, high production capability calzone machine. As a result, World Trading ordered more than 10 moulds for various sizes of calzones and also started to sell different kinds of food using ANKO's calzone machine. Currently, ANKO is working on designing a Mexican burrito, pizza machine production line for World Trading, and as World Trading's business grows, there is more calzone bread machine expected to be purchased.

At the beginning, ANKO was concerned with the modification of the HLT-700XL because of calzone's production process. HLT-700XL is a machine for making unfermented food, whereas calzones require fermented dough before baking. Regardless of the concerns, ANKO modified the machine to achieve World Trading's requirements. ANKO evolutionally changed HLT-700XL machine from a non-fermented food making machine to a calzone machine that allows processing of fermented food.
